Summer Herbs for Home Medicine: Growing, Harvesting, and Making Remedies

Summer is one of the best times to deepen your relationship with medicinal plants!

Join Ashley Elenbaas, founder of Sky House Herb School & Apothecary, for a hands-on and experiential workshop exploring how to identify, grow, harvest, dry, and prepare summer blooming herbs commonly found in Minnesota gardens and landscapes.

This immersive class invites students to learn through direct experience by touching, tasting, smelling, harvesting, and working closely with the plants themselves. Together, we will explore each stage of the medicine-making process, from choosing and growing medicinal herbs to harvesting, drying, and preparing herbs for use at home. Students will also have opportunities to practice handling fresh herbs and gain practical skills for creating simple herbal preparations with confidence.

  • Age / Ability Level: 14+ Beginner - Advanced

  • Focus on a handful of accessible summer herbs that support stress, digestion, immunity, and general vitality.

    Students will make their own herbal tincture using seasonal native medicinal plants and learn how to use this at home as a medicine. Students will leave with practical knowledge, greater confidence in working with herbs, and a deeper connection to the plants growing around them.

    Students should bring a cutting board and a knife or clean kitchen scissors for preparing the fresh herbs for tincturing.

  • CENTER FOR PEOPLE AND CRAFT is committed to building a diverse, inclusive learning community where people of all backgrounds feel welcome and able to participate. As we launch our first workshop series, we are dedicating space in each class for reduced-tuition scholarships to support anyone facing financial barriers. As we build a more robust scholarship program, we hope this initial launch will remove barriers and expand access to hands-on learning for all.

    Anyone with financial need is encouraged to apply for a half-tuition scholarship. To be considered, please submit a brief online application. Please note that CENTER FOR PEOPLE AND CRAFT is operating with limited financial resources and an entirely volunteer staff. Therefore, we cannot guarantee a spot for every applicant.   • CPC is able to provide refunds up to two weeks before the start date of the class for which the registration was submitted, though we do retain a $20 fee for return payment processing. If you need to cancel your class within the two week window, a refund is not guaranteed, but will be considered based on several factors.

    If CPC needs to cancel a class due to low enrollment, teacher illness, or other factors, you will receive a full refund. Read our full set of policies.

Ashley Elenbaas,M.Sc., RH(AHG) is a clinical herbalist, educator, and community facilitator with over 20 years of experience in plant medicine. She earned her M.Sc. in Clinical Herbal Medicine from the Maryland University of Integrative Health in 2008 and is the founder of Sky House Herb School and Apothecary. Ashley’s work blends clinical herbalism with earth-based spirituality, art, yoga, and ancestral traditions. Based in Minnesota, Ashley teaches in-person and online workshops, herbal apprenticeship training courses, leads herb walks, and hosts seasonal gatherings.
